I love this time of year!! The lights/decorations, music, spending extra time with family and friends!! May we never forget the true meaning of Christmas... JESUS! He came so that we would have a reason to live; so we would have a reason to give and bless others. Merry Christmas!!! :)
Thought I'd quickly share an apple cake w/ you that I tried. It turned out quite well and very yummy... so if you are trying to stay away from sugar and feeling depressed over it this time of year, try this!! :)
Roman Apple Cake
1 c. butter, softened
3 eggs
1/2 c. unsweetened applesauce
*Mix together well. Add:
2 1/4 c. w.w. flour
1 tsp. stevia
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
1 c. buttermilk
* Add dry ingredients alternately w/ buttermilk. Mix well. Add:
2 c. shredded apples
* Fold in. Place in a 9X13 in. pan. Sprinkle cinnamon over the top.
Bake at 350 for 20 min. or until a toothpick comes out clean. Serve warm w/ whipped cream!! Yummy!!
Whipped Cream
1 c. heavy whipping cream
pinch of salt
1 tsp. vanilla
1 T. frozen white grape juice concentrate
*Pour cream and salt into a chilled bowl. Beat until soft peaks form. Add vanilla and juice.
Beat until stiff. Refrigerate until ready to use.

The cake has approx. 21 grams of carbohydrates per piece, if you cut your cake into 12 pieces. So there's like 248 in the whole cake. :) Happy eating!!!
